Double chocolate muffin almost sugar-free and flour-free

These muffins are really to die for. A simple recipe that you could use to introduce your children to cooking. If your children are old enough to cook alone, this is a perfect recipe for them.

1/4 cup cocoa powder
2 tablespoons oatmeal
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons brown sugar
1/2 cup creamy peanut butter
1/4 cup unsweetened applesauce
1/4 cup vanilla Greek yogurt
1 teaspoon vanilla extract
2 tablespoons of honey
1 egg
5 tablespoons of dark chocolate chips

Preheat the oven to 350 degrees f and butter a 9-compartment baking pan with a muffin pan and add water to the remaining 3 compartments.

In a large bowl, combine the cocoa powder, oatmeal (reduce regular oatmeal to flour. Make sure to measure the oatmeal after reducing it to flour), baking soda, baking powder, salt and brown sugar.

In a second bowl, combine the peanut butter (do not reheat), applesauce, Greek yogurt, vanilla and honey.

Add the dry ingredients to the wet ingredients and add the egg. Do not over mix.

Stir in the chocolate chips.

Bake for 18 to 22 minutes.
